Starward 2.25 Year Old Spirit Limited Release Wine Cask Edition - New World Projects (70cl, 41%)
Produced in Australia from Australian barley and matured in a wine cask, this limited release is a 2.25 year old spirit, so not-quite yet whisky. Limited to 720 bottles Batch No 170721 was bottled on the 8th of August 2017.
Originally known as the Victoria Valley Distillery when it opened in 2008, the facility became the New World Whisky Distillery the following year. Unlike the majority of Australian whisky makers, located in Tasmania, the distillery is on the mainland in the town of Melbourne, Victoria. The wider state of Victoria is home to 95% of the country’s wine production too, and the distillery’s single malt brand, Starward, makes great use of this with its core range expressions matured in red wine and Apera (an Australian sherry) casks from the region. Since 2015, the distillery is part of the Diageo-funded Distill Ventures investment portfolio, along with Westward in Oregon, USA and the Stauning distillery in Denmark. In the same year, the distillery was again renamed, this time after its flagship Starward brand.
