Kaoliang is a strong distilled spirit of Chinese origin made from fermented sorghum. China’s national drink, Baijiu (meaning ‘clear spirit’) is distilled from wheat or glutinous rice, and was first made 5,000 years ago. Baijiu can be broken down into five main flavour categories: strong, light, sauce (soy, specifically), rice and mixed.
