GlenAllachie 35 Year Old Vintage 1989 (70cl, 48%)
The GlenAllachie 35-year-old, a beautiful single malt Scotch whisky that dates back to 1989 and has spent the last three-and-a-half decades maturing in three Pedro Ximénez, one oloroso, and two virgin oak casks.
“Unifying these six spectacular casks has created the perfect equilibrium between the sweet influence of Pedro Ximénez, the nutty contribution of Oloroso, and the spiciness of the virgin oak.” – Billy Walker, GlenAllachie master distiller
The whisky aged in the three Pedro Ximénez hogsheads (#5896, #5897, and #5898) was distilled on 7 June 1989 and contributed flavours of poached plum, muscovado sugar and heather honey. The whisky aged in the two virgin oak casks (barrels #2152 and #2153) was distilled on 3 July 1989 and it added more heather honey and elements of cloves, treacle, nutmeg and pomegranate. The whisky aged in the oloroso puncheon (cask #5587) was distilled on 7 July 1989 and brought notes of cinnamon, dried red berries, dark chocolate and nutmeg.
The GlenAllachie 35 Year Old was bottled at a high strength of 48% ABV, natural colour and unchill filtered, to let the spirit greater speak for itself. Only 1700 bottles released.
A distinctive decanter presented in a wooden display box comes with a booklet containing Walker’s handwritten notes, providing his insights into the cask selection and story behind the 35-year-old. The cover is an FSC-certified paper made of spent malt.
Glenallachie distillery was built by Mackinlays in 1967 to meet the demands of its blends following an upturn in sales in the US. Built as a small compact distillery, GlenAllachie was the fourth distillery designed by William Delme-Evans. The complete whisky making process was gravity fed and combined with unusual horizontal condensers it was a triumph of engineering and design. In its short history it has passed through the hands of Invergordon Distillers and Pernod-Ricard. During this period the focus was always on the provision of blends, with over 20 years between the first Mackinlay’s distillery bottlings of its single malt and the next official release from Chivas Brothers in 2005. Now in the hands of Billy Walker, Glenallachie is finally being pushed as an increasingly popular single malt brand since 2017.
